Katharine's Earth Day Honey Cake

Leave it to our Bee Lady to share such a sweet celebratory recipe for Earth Day! Earth Day is over? Don’t fret, this is a cake you will want to bake all year long!

Cake:

1 cup honey

2 cup flour

2 tsp. baking soda

½ tsp. salt

2 eggs

2 cups of local fresh or frozen fruit such as local cherries, blueberries or blackberries

If using fresh fruit add ½ cup of fruit juice

Gooey Topping:

½ cup local honey

½ cup cream

½ cup butter

1 tsp vanilla

In a large bowl, mix together all of the cake ingredients, including the fruit liquid. Pour into a greased 9 x 13” greased pan. Bake at 350 F. for 30 – 40 minutes, or until the top springs back when touched lightly in the middle.

While the cake is baking, prepare the topping. In a small saucepan, bring the honey, cream and butter to a boil. Simmer for about 1 minute. Remove from the heat and add the vanilla. Pour the hot topping over the cake when you remove it from the oven. The sauce soaks into the cake.
