Phyllis' Summer Salads

Looking for some meal inspiration? Try one of Phyllis' summer salads. These vegetarian salads are a great way to help the earth, too! Vegetarian and vegan diets create fewer greenhouse gas emissions. Even switching a few meals a week to a vegetarian or vegan option is helpful.


Oriental Salad

1 lg head bok choy finely chopped

4 green onions, minced

Mix together and refrigerate a few hours.

Add 1 pkg slivered almonds, just before serving.

Dressing:

1 cup sugar

1/2 cup vinegar

2 Tbs soy sauce

1/2 tsp salt

1/4 tsp pepper

1/2 salad oil

Combine and shake in jar until sugar is dissolved, then add oil.

If you have food processor, mix all ingredients except oil. Poor oil in top with processor running.

I add dressing about ½ hr. before serving and sprinkle almonds on top when serving.


Berry Spinach Salad

2 bunches fresh spinach, washed, dried and torn.

2 pints strawberries, cleaned and halved.

Dressing:

1/3 cup sugar

2 Tbs sesame seeds

1 Tbs poppy seeds

1 1/2 Tbs minced onion

1/4 tsp Worchester sauce

1/4 tsp paprika

1/2 cup vegetable oil

1/4 cup cider vinegar

Place spinach and strawberries in a bowl, do not mix. Place dressing ingredients in a blender or food processor and blend thoroughly until mixed and thickened. Do not overmix.

Just before serving, toss salad gently with dressing.

(I add mandarin oranges, mango, or pear and sliced almonds. Whatever fruit is in season.)


Massaged Kale Salad

1 bunch kale, stalks removed and discarded, leaves thinly sliced

1 lemon, juiced

1/4 cup extra-virgin olive oil, plus extra for drizzling

Kosher salt

2 to 3 teaspoons honey, depending on size of lemon

Freshly ground black pepper

1 mango, diced small (about 1 cup) I use pears or peaches in season, or canned mandarin oranges, if I don’t have a ripe mango.

Small handful toasted sunflower seeds), about 2 or 3 rounded tablespoons

Directions

I cut leaves off the stems and discard stems. Then I chop up leaves quite fine and put some in bowl. Add salt and massage. Then more chopped kale, a little more salt and massage some more. Then I add the dressing made from ingredients above. Add fruit and seeds and mix it up.
